Treadmill Workout and Vegetarian Burritos

The weather in Atlanta was beautiful today. So nice that I decided to skip my kickboxing class so I could run outside at the park with Sean. We got home from work, fed the cats, and headed out to the park. As soon as we got there… it started pouring. Boo!

Sean suggested we run on the treadmills at our apartment complex, and I sullenly agreed. I’ve probably run on the treadmill less than 5 times in my entire life. Less than five times in almost 24 years. Yeeps. I quickly searched Pinterest for a treadmill workout, otherwise I knew I’d get bored. I found this one:


It was a pretty good workout, I only got about 4 miles, but the speed and incline work felt like I was running harder/longer than I was.

Afterward, Sean and I made some pretty tasty burritos. On a tortilla I spread some Trader Joe’s salsa style refried beans, sprinkled on some black beans and Trader Joe’s fire-roasted corn, opened a can of Rotel and spooned on a little bit of tomatoes and green chiles, and sprinkled on some cheese. I rolled each one up, wrapped it in foil, and put it in the over for about 15 minutes. The result was pretty good. They had more texture than our egg quesadillas, and we were both full in no time!
