Vegetarian Sloppy Joes

Sean and I tried a new recipe Monday night. He always really likes the bean recipes I find (black bean soup, vegetarian chili, bean burgers, etc.). Sean most definitely likes this one too. I served it on top of flat buns with shredded red cabbage and shredded cheese on top. Yum!

Ingredients
1 yellow onion
1 green onion or celery stalk (optional, but not essential)
1 tablespoon olive oil
1 15-ounce can kidney beans
1 15-ounce can pinto beans
1 15-ounce can tomato sauce
1/3 to 1/2 cup ketchup
1 tablespoon apple cider vinegar
2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon oregano
1/2 teaspoon salt
Fresh ground pepper
Dash hot sauce

Directions
Saute onions and celery until soft, then add everything else in and let simmer for 10-20 minutes. Bam. Done.

I made these with potato coins sliced really thinly almost like potato chips baked at 425 for about 30 minutes until cooked through. Yum-tastic!
